Why camel
Camel, done properly.
Camel isn’t a novelty here — it’s the backbone of the kitchen. Muqmad cured and soaked in ghee for breakfast. Suqaar diced and seared hard and fast. Meat slow-steamed until it falls off the bone. And at the coffee bar, camel milk pulled into lattes and cappuccinos: naturally sweet, and impossible to imitate.
